Okay, real talk. You’re coming home late. You’re hungry. You’re tired. And worst of all, you still have to make dinner. You look in the pantry, and realize too late that you forgot to go to the store. Even worse, you can’t afford to order in, or even get some groceries! And the boss is coming over for dinner in fifteen minutes! What are you going to do!?!?

Alright, so I may have gone over-board with that scenario. But still, if you’re anything like me, you’re busy and under-payed, but still want to eat a decent home-cooked meal. We’re here to help.

At Oatmeal and Ice Cream, we understand that sometimes you just won’t have the ingredients you need to make that perfect recipe. That’s when you need to get…creative.

Most of the recipes on this blog are dishes we put together at the last minute with the ingredients we had on hand. But don’t think that makes them bad! Every single one of these meals is uniquely delicious and will warm your heart and stomach for the battles that tomorrow brings!
